His dish? A sumptuous crab cake sandwich that exudes his flair for the finer things in life.
A Life-Changing Surgery and Its Aftermath
Prince’s story is one filled with both struggle and triumph. In 2021, he faced a life-threatening condition known as dilated cardiomyopathy, which required immediate surgery and a heart transplant. His mother, Chantell Hardin, recalls the turmoil of those months: “It was the worst nightmare ever.” After three harrowing months on the waiting list, Prince received the life-saving organ he desperately needed, but not without the hardship of adjusting to bland hospital food. “Everything was too bland for my taste,” he asserted, expressing a sophistication beyond his years.
Beyond a Wish: A Creative Collaboration
After recovering, Prince had a magical experience in Orlando, courtesy of the Make-A-Wish Foundation. While he thought their journey together might end there, the organization surprised him with an invitation to collaborate on creating a unique menu item. The excitement he and his mother felt is a testament to the emotional journey they have gone through together. “We burst out in tears,” Hardin confessed. The opportunity came as a ray of hope, allowing Prince to turn a challenging experience into an inspiring one.

Once in the kitchen, Prince met Chef Fernando Canales, who recognized Prince's sophisticated palate right away. “I was impressed when he said, ‘Oh I love crab cakes,’” Canales shared.
